​PRODUCTION MANAGER

 

​​We are seeking a dedicated and experienced Production Manager to join our team at The Wimbledon Smokehouse, a leading smoked fish factory renowned for quality and tradition. The ideal candidate will support the Operations Manager in overseeing daily operations, ensuring production targets are met, maintaining the highest standards of quality, and promoting a safe and efficient work environment.

Key Responsibilities: 

Production Operations

• Assist in planning, scheduling, and supervising daily production activities.

• Monitor the production process to ensure efficiency and consistency in smoked fish products.

• Ensure all equipment is properly maintained and operational.

 

Team Management

• Supervise and train production staff to meet performance and safety standards.

• Support staff scheduling and manage shift patterns to optimize productivity.

• Address team concerns, provide guidance, and promote a positive work culture.

Quality Assurance

• Ensure all products meet company quality standards and comply with food safety regulations.

• Conduct regular quality checks, ensuring consistency in product appearance, flavor, and packaging.

• Monitor compliance with HACCP, GMP, and other food safety guidelines.

 

Health & Safety

• Maintain a safe working environment by enforcing health and safety regulations.

• Conduct regular risk assessments and safety drills in coordination with the Health & Safety team.

 

Inventory and Waste Management

• Monitor raw material stock levels and coordinate with suppliers to avoid shortages or overstocking.

• Implement waste reduction strategies to minimize spoilage and optimize yield.

 

Reporting and Administration

• Record production data, including output, quality control findings, and downtime.

• Assist in preparing reports for management regarding production metrics and staff performance.

• Participate in production meetings and contribute to continuous improvement initiatives.

 

Key Requirements: 

Experience and Knowledge

• Proven experience in a production or manufacturing environment, preferably in Salsa Accreditation Facilities.

• Knowledge of smoking processes and fish preparation techniques (advantageous).    

• Understanding of food safety standards and compliance requirements (HACCP certification is a plus).

Skills and Attributes

• Strong leadership and team management skills.

• Excellent problem-solving and organizational abilities.

• Ability to work in a fast-paced, high-pressure environment.

• Attention to detail and commitment to maintaining quality standards.

• Strong communication skills, both written and verbal.

​CLEANER OPERATIVE

 

 

The Wimbledon Smokehouse is a company that specialises in the production of top quality smoked fish to high end establishments across London. With a current team of 10 members of staff we are now looking to increase our production  and are seeking a hard working, clean and driven candidate to join our growing and friendly team in our Wimbledon factory.

 

​Particulars:

Location: Wimbledon SW19 8UG

Days: Monday - Friday 

Hours:  1pm - 6pm  

Pay: £11.44 

Payday: Weekly

 

Duties and Responsibilities:

 

• Ensure washing room kept clean at all times, duties include:

• Floor

• Walls

• Cleaning of fly screens, ice machine, doors and handles

• Any rubbish to put outside

• All dirty boxes, racks, trolleys(sprayed with oven cleaner) to be stacked tidy in the corner for Production porter  

• Pallets to cleaned and stored away

• Yellow chopping boards 

• Fridge door handle and pump truck wiped. 

• Stack clean boxes away 

• Liase with production team to ensure they have all equipment required for morning prep.

 

To maintain all communal area’s these include

• Toilets - mopped, toilet roll replaced, toilets cleaned, sinks polished air freshener replaced.

• Kitchen area - out of date food binned, fridge cleaned, floor, sink, storage areas cleaned.

• Staff eating area - table wiped, chair put away, window sill and floor cleaned.

• Changing room hoovered and kept tidy

• Stairs  hoovered and bannisters sanitised 

• Entrance to building - swept, dusting, mopping, table cleaned delivery’s put away.

• Outside area - all rubbish in bin and yard kept organised and tidy

• Storage area - hoovered 

 

 

Ensure production area is kept clean, these duties include: 

• Floor using Karcher Machine 

• Production fridges, floor cleaned, walls, drains, door handles, floor corners 

• Production walls

• Smoking production rooms, smokers, walls, 

• All sinks to be descaled 

• Refilling and restocking production items
